Around our launchpad, we are either eating dinner at 5:00 pm to get to all our sports and activities or at 8:00 pm. Either way, we are always looking for quick, healthy and yummy dinners. Check this one out: Easy Baked Ziti with Tomatos, Spinach and (possibly) meatballs! (more…)
After two long weeks of change around our launchpad, it is exactly what we needed to really look at how lucky and fortunate we are in our lives. There are lots of tangible things we “could” have or “want” to have, but when it all comes down to it, what we really “need” is our family, friends and health. This has lead to lots of spring cleaning and clearing out the useless stuff around the rocket.
Here are this week’s tips to get you cleaning out the clutter, physically and mentally. (more…)

Soup and salad are everyone’s “go to” healthy food, not necessarily. Just because you are ordering or eating a soup or salad, you are not being “healthy”. Some salads are over 800 calories when you add dressing, bacon, avocado, cheese, croutons and fried chicken. Soup is a great warming healthy food, only if you read the package or know what is in it. Look at these soups next time you are out or shopping. Remember cream, butter, half and half and anything rich are going to kill your “healthy” choice.

And speaking of school, how do you and your teachers explain 9-11 to your children? The History Channel has a great documentary playing lately which helps explain 9-11 to younger children. There are artifcats and items at the Smithsonian that young children can relate to (cell phones, briefcases, fireman’s ax). Have you taught your children about 9-11? How are you going to remember it this week? Attending a memorial service? Watching a special? (more…)
