Weekly Tips for Febrary 20, 2012

How many of the 100+ snacks have you tried during our Month of Lifestyle Changes (of Snacks)? A new favorite is the cucumber slices with Laughing Cow spreadable cheese. Yum, Yum.

Now with Valentine’s over, the flowers have wilted and the chocolate is either all gone (guilt, guilt, guilt) or thrown out and time to focus or re-focus on our goals to Get In Gear for 2012. (more…)

Scrumptious Meatloaf

Heart Healthy Recipe from Tri-City Medical Center.

Ingredients

1 lb ground beef, extra lean or ground turkey

1/2 cup (40z) tomato paste

1/4 onion, chopped

1/4 cup green peppers

1/4 cup red peppers

1 cup tomatoes fresh, blanched chopped

1/2 teaspoon mustard – low sodium

1/4 teaspoon black pepper

1/2 teaspoon hot pepper, chopped (optional if making for family with small kids)

2 cloves garlic, chopped

2 stalks scallion, chopped

1/2 teaspoon ground ginger

1/8 teaspoon ground nutmeg

1 teaspoon orange rind, grated

1/2 teaspoon thyme, crushed

1/4 cup bread crumbs, finely grated.

Directions:

Mix all ingredients together. Place in 1 lb loaf pan (preferably with drip rack) and back covered at 350 degrees for 50 minutes. Uncover pan, continue baking 12 minutes.

Did you make any New Year’s resolutions, other than health, fitness or nutrition? How about trying to be a gentler and kinder person? To stop yelling at other drivers? Stop shopping when frustrated?  Or making yourself genuinely happy? 

In the process of cleaning out aka Forced Spring Cleaning, 10 year old boxes were found and organized.  In such boxes a lot of self-help books, guess I was looking for something in the late 90′s? Found – 52 nice things to do to make someone happy by Jeri-Lynn Johnson.  In reviewing this book, I thought I would add these sharing ideas to our weekly tips. (more…)
