So much going on in February: renewing resolutions, Valentine’s Day, kids are off school at least 2 days this month and still wanting to keep the Healthy Me going. Did you make any New Year’s resolutions, other than health, fitness or nutrition? How about trying to be a gentler and kinder person? To stop yelling at other drivers? Stop shopping when frustrated?  Or making yourself genuinely happy? 

In the process of cleaning out aka Forced Spring Cleaning, 10 year old boxes were found and organized.  In such boxes a lot of self-help books, guess I was looking for something in the late 90′s? Found – 52 nice things to do to make someone happy by Jeri-Lynn Johnson.  In reviewing this book, I thought I would add these sharing ideas to our weekly tips. (more…)

Four fabulous days on the Central California Coast with just my husband, exploring places we have never seen before.  If you get the opportunity to travel to the Central Coast (Santa Barbara, Avila Beach, San Luis Obispo, Seashell Scape, Chumash Lake, etc.), just start packing and go-go-go. Remember to stay focused and keep on pushing to maintain healthy habits and lifestyle through the holidays. Since the retailers like to start pushing Christmas in October, keep your wits about you. You are more than 7 weeks from the December holidays. Don’t eat that extra cookie, dessert, cake, cupcake, candy bar and think in 2011 I will be better. That is not what YOU are about. YOU are about being healthy, now TODAY! Stay in the zone. Get at least 30 min. a day of some type of movement (walk, dance, skip, shuffle around your parking lot, hula-hoop) and you will be ecstatic with yourself come 2011. You don’t want to be one of “those people” at the gym in January. You want to be a happy, confident woman keeping your routine in check. (more…)

Mexican Summer Squash Soup

Ingredients:

½ cup grated Jack cheese

6-8 small squash chopped (Mexican, zucchini, yellow)

6 roma tomatoes chopped

1 med. Spanish or brown onion chopped

1 chicken bouillon square or 1 cup of chicken broth

Extra virgin Olive oil

2 cooked skinless boneless chicken breasts (optional)

Avocado (optional)

Crushed tortilla chips (optional)

In large deep skillet drizzle olive oil to lightly cover. When hot, add squash turning repeatedly. Continue cooking covered and add onions. Once onions become clear, add tomatoes and chicken bouillon. (Add chicken) Cook covered 20 minutes or until squash is completely cooked. Remove from stove and cover with Jack cheese. Cover until ready.

** This is a family recipe from a friend, so you have to eyeball if you have enough broth. There have been times I have had to add a whole can of broth or a can of chopped tomatoes with green chilies. This is the base recipe; add to it what you like.

Well, just as we finally get some true summer weather, we roll into August! For some school starts in less than 2 weeks for others at the end of the month.  Let’s make the most of whatever time we have left and ENJOY–ENJOY–ENJOY!!  Go Dawn Patrol and have breakfast at the beach, hike that trail you have been wanting to do ALL summer, make that new recipe, eat outside EVERY night.  What are you doing to make the most of your summer break?

Tips from RockIt Mom:  

1. GREEN-This is from RockIt Mom’s own personal observations!  We hosted parties over the weekend and of course in preparation for these parties, we hit the large club warehouse store.  In a hurry, purchases were made for pure convenience (fruit platters, vegetable trays and other snacks).  On the day of the first party, while putting out all the food, it was ridiculous how most of the food in the “party trays” were rotten, overly ripe or just plain bad.
