Lean Green Pita Dippers

Prep time: 10 minutes

Ingredients:

4 whole-wheat pitas

1 cup fat-free plain Greek yogurt

½ cup fresh or frozen spinach

¼ of cucumber, sliced

pinch of salt

½ teaspoon black pepper

What to do:

Preheat oven to 400° F.

Place yogurt, spinach, cucumber, salt, and pepper into food processor or blender. Process until smooth, about 1 minute.

Place dip into a bowl and refrigerate until chips are done.

Cut pitas into 8 wedges.

Arrange pita wedges on a baking sheet in a single layer.

Spray with cooking spray and sprinkle lightly with garlic powder.

Bake for 5 minutes or until light golden brown and crispy.

Use the pita wedges to scoop up the yogurt dip!

Chicken Tacos with Mango/Avocado Salsa

Your family will thank you when these tacos hit the table. You can leave the  seeds in the jalapeno for a spicy kick; omit them if you prefer a mild salsa.

Ingredients

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon onion powder

1/4 teaspoon ground red pepper

3/4 teaspoon salt, divided

4 (6-ounce) skinless, boneless chicken breast halves

1 1/2 teaspoons olive oil

1/2 cup diced peeled mango

1/2 cup diced peeled avocado

1/2 cup chopped tomato

1/3 cup prechopped onion

2 tablespoons chopped fresh cilantro

2 tablespoons fresh lime juice

1 tablespoon minced jalapeño pepper

8 (6-inch) corn tortillas

Preparation

1. Heat a nonstick skillet over medium-high heat. Combine first 4 ingredients; stir in 1/2 teaspoon salt. Rub over chicken. Add oil to pan; swirl to coat. Add chicken; cook 4 minutes on each side or until done. Remove chicken from pan; let stand 5 minutes. Cut into 1/4-inch-thick slices.

2. While chicken cooks, combine mango and next 6 ingredients (through jalapeno); stir in remaining 1/4 teaspoon salt.

3. Heat tortillas according to package directions; top with chicken and salsa.

Weekly Tips from RockIt Mom:

1. GREEN -  We find ourselves stumped with the infamous questions “Can this be recycled?”.  We know the standard ones (aluminum cans, glass, paper, cardboard, magazines, newspapers, styrofoam), but what about those plastic clamshell containers?  Go to Earth 911 and they will tell you all the recycling centers closest to your zip code and what you can take there.

2. HEALTH - To stay healthy, happy, and wise, come to the WOMEN ROCK! Event sponsored by RockIt Mom!  There will be every type of women oriented vendor you could possibly need; a bra fitting, dinner on busy nights, a facial, massage, surf lessons, chocolate and wine!  It is this Sunday,  March 7, 2010 from 1-4 pm.  If you aren’t local, we will have pictures and more info for you to contact the fabulous vendors.  Check out the Facebook page: Women Rock, A Health & Lifestyle Event for Women to RSVP for this event.  We will have amazing goody bags to the first 100 women!

3. RECIPE - To keep your metabolism up and running, here are some go to lunches and snacks that work wonders. 

- Whole wheat tortilla with 1-2 tbls. of peanut/almond butter, sliced whole banana;

-Morningstar Veggiburger, whole wheat pita, 1 tbls. of hummus, shredded carrots/broccolli/cabbage;

-Lowfat Greek yogurt, fresh berries, 1-2 tbls. of Raw Aguave Nectar, sprinkle of cinnamon;

-Parmeesan cheese (3) .5 oz. pieces, drizzle each with 1 teasp. balsamic vinegar;

-Cut a cucumber into wedges, spoon out seeds, fill with cottage cheese, fresh dill, salt & peper.
