Avocado Deviled Eggs

Want a side dish that packs protein and healthy fats, try these deviled eggs. But to cut down on the cholesterol and saturated fat, replace half of the egg yolks with mashed avocado and Greek yogurt before piping them back into the middle of the hardboiled egg whites. (Sprinkle with paprika if desired.)

Avocado Stuffed Burgers

Ingredients:

1 1/4 lb extra lean beef or turkey, ground

1 x egg equivalent beaten lightly

1 sm yellow onion finely chopped

1 tsp Worcestershire sauce (optional)

1/2 tsp salt and pepper

4 oz nonfat cheese

1/3 cup fine dry breadcrumbs

1 1/4 cup tomato juice

2 tsp chili powder

4 oz green chiles (4-oz. can)

1 sm avocado peeled

Instructions:

* (Monterey jack, cheddar, hot pepper, your choice)

Divide into 8 patties. In center of each patty place 1/4 slice of avocado, chilies and 1/4 of cheese. Place second burger on top and seal edges. Grill to preference.

Chicken Tacos with Mango/Avocado Salsa

Your family will thank you when these tacos hit the table. You can leave the  seeds in the jalapeno for a spicy kick; omit them if you prefer a mild salsa.

Ingredients

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon onion powder

1/4 teaspoon ground red pepper

3/4 teaspoon salt, divided

4 (6-ounce) skinless, boneless chicken breast halves

1 1/2 teaspoons olive oil

1/2 cup diced peeled mango

1/2 cup diced peeled avocado

1/2 cup chopped tomato

1/3 cup prechopped onion

2 tablespoons chopped fresh cilantro

2 tablespoons fresh lime juice

1 tablespoon minced jalapeño pepper

8 (6-inch) corn tortillas

Preparation

1. Heat a nonstick skillet over medium-high heat. Combine first 4 ingredients; stir in 1/2 teaspoon salt. Rub over chicken. Add oil to pan; swirl to coat. Add chicken; cook 4 minutes on each side or until done. Remove chicken from pan; let stand 5 minutes. Cut into 1/4-inch-thick slices.

2. While chicken cooks, combine mango and next 6 ingredients (through jalapeno); stir in remaining 1/4 teaspoon salt.

3. Heat tortillas according to package directions; top with chicken and salsa.

Lime-Crab Soup for the Summertime

LIME –CRAB Soup

Serves 4

INGREDIENTS

• 4 limes, zested and juiced

• 3 cup fresh corn (cut from about 6 cobs)

• 1/2 chipotle chile in adobo sauce, seeded, plus 1 tbsp adobo sauce

• 4 cups reduced-sodium fat-free chicken broth

• 1/2 teaspoon salt, divided

• 1/2 pound cooked crabmeat

• 1 avocado, pitted and diced

• 1/4 cup packed chopped fresh cilantro

• 1/2 teaspoon crushed cumin seeds

PREPARATION

1. Reserve 1 tbsp lime juice. Blend remaining lime juice, zest, corn kernels, chile, adobo sauce, broth and 1/4 tsp salt in a blender until smooth. Divide soup among 4 bowls.

2. Toss crabmeat, avocado, cilantro, cumin seeds, reserved lime juice and remaining 1/4 tsp salt in a bowl. Sprinkle soup with crab mixture and serve with tortilla chips, if desired.

444 calories per serving 10.6 g fat (1.5 g saturated), 77.6 g carbs, 13.9 g fiber, 23.7 g protein
