Skinny Crock Pot – Tangy Coconut Black Bean Soup

Makes 6 servings

Minimum Crock Pot Size: 2 quarts

Ingredients

1/2 cup black beans, dry

3 cups vegetable broth, low sodium, no sugar added

1 (15 oz.) can tomato sauce, low sodium, no sugar added

1 cup water

4 tsp. onion powder

3 tsp. garlic powder

1 tsp. cilantro, dried

3 tsp. cumin, ground

AFTER THE SOUP IS DONE COOKING

1 cup light coconut milk

1 tbsp. dried basil

1 tbsp. onion powder

1 tbsp. garlic powder

1 tsp. cumin, ground

Directions

Step 1 – Combine all the “before” ingredients in the crock pot and stir briefly to combine.

Step 2 – Cook on low for 8-10 hours. It’s done when the beans are soft and cooked.
