Salad with protein and great for hot weather.

This is a salad, lunch or a snack with lots of protein and vegetables.  It is great for post-workout.  This recipe is more of a hit n miss process. Add the ingredients and adjust according to taste.


1-1.5 cups of quinoa (mixture of white and red). Prepare according to directions on box.

2 cups of cooked/shelled Edadame

¼ cup of chopped red pepper (or roasted red peppers)

1 cup of Feta cheese (more or less according to taste)

¼ cup of chopped red onion

¼ cup of chopped celery

¼ or less chopped cilantro

2-3 TBSP crushed garlic

1 TBSP of Canola oil

Juice of whole lemon

Juice of whole lime

1 TBSP of Basil Olive Oil

Sea salt and pepper to taste

OPTION: 3-4 TBSP of fresh pico de gallo

Mix together, chill for 1 hour and enjoy.
