Light Summer Salad

Summer isn’t over yet, so keep on making those fun salads. Here is a new one I concocted: Quinoa Cucumber Salad. 

All the amounts are by eyeball/guesstimate.

Red/White Quinoa — about 1-2 cups cooked

White corn — about 1 cup

Chopped red onion – 1/4 cup

Mini red, yellow & orange bell peppers, chopped – 1/3 cup

1 can of Tri-Beans, drained

4 oz of grilled chicken, chopped.

Salt & Pepper to taste and mix all ingrediets with homemade Ranch dressig.



4 oz of fat free Greek yogurt

2-3 oz of milk — 1% or less

1 packet of dry Ranch dressing

Blend all three ingredients in a food processor until smooth.
