When you want something rich with gravy, there are few things that will satisfy that craving except for, well…. gravy! But the fat content is a bit tough on the waistline. So we came up with a recipe that will love your hips AND satisfy your cravings, Chicken with Mushroom Gravy!
Nutritional Content (Makes approximately 3 quarts)
Serving Size: 1 cup Calories: 82 Total Fat: 1 gm Cholesterol: 35 mg Fiber: 1 gm Sodium: 25 mg Carbohydrates: 5 gm Protein: 14 gm
4 cups low sodium chicken broth
4 large, raw chicken breasts – boneless and skinless
1/2 lb. cimini mushrooms, sliced
2 tbsp onion powder
4 tbsp. whole wheat pastry flour (regular whole wheat will work too)
2 tbsp. organic cornstarch or tapioca starch (organic to avoid GMO’s)
Salt and pepper to taste
Put the broth into the crock pot and turn it on high.
Whisk in the flour until all clumps are gone.
Add in the chicken breasts, mushrooms and onion powder.
Cook for 4-6 hours (it’s done when the chicken falls apart)
When it’s finished cooking, scoop out the chicken and set aside. Using a hand blender, blend the mushrooms into the broth. Add the cornstarch or tapioca starch and blend completely.
Return the chicken to the pot and serve!
SERVING SUGGESTIONS: Serve over brown rice, whole wheat pasta or whole grain biscuits.
