Charred Corn with Scallions and Feta

Not Without Salt blogger Ashley Rodriguez loves to liven up corn on the cob by buttering or oiling it, then grilling until charred in parts and cooked through. Once cooled, she slices the corn off the cob and tosses with chopped scallions and crumbled feta, plus olive oil and—of course—salt, to taste.

Avocado Deviled Eggs

Want a side dish that packs protein and healthy fats, try these deviled eggs. But to cut down on the cholesterol and saturated fat, replace half of the egg yolks with mashed avocado and Greek yogurt before piping them back into the middle of the hardboiled egg whites. (Sprinkle with paprika if desired.)

Endorphins are Imperative!

It is only the second week of school and I have been super edgy, impatient, cranky and not being the “Mommy” I want to be! I love summertime. It is my favorite season of the year. Who doesn’t love sun, fun, beach, pools, warm weather, cute sandals, sundresses, amusement parks, amazing fresh fruit, movies at 10am and the best part — sleeping in!!
