Summer may have been over for you when the kids went back to school, but there are still some activities and family fun you can squeeze in. Our family has been very fortunate to be invited to go waterskiing and tubing at two different lakes and 4×4 in the Mojave Desert. It is truly a A-Ha parent moment to watch your babies get behind a ski boat and be taken away. Or jump into a Jeep and take off over the mountains and climb rocks. You want these moments so you can watch them grow and at the same time, grab them – wrap them in their favorite blankie and cuddle them tight! Lean Green Pita Dippers

Prep time: 10 minutes

Ingredients:

4 whole-wheat pitas

1 cup fat-free plain Greek yogurt

½ cup fresh or frozen spinach

¼ of cucumber, sliced

pinch of salt

½ teaspoon black pepper

What to do:

Preheat oven to 400° F.

Place yogurt, spinach, cucumber, salt, and pepper into food processor or blender. Process until smooth, about 1 minute.

Place dip into a bowl and refrigerate until chips are done.

Cut pitas into 8 wedges.

Arrange pita wedges on a baking sheet in a single layer.

Spray with cooking spray and sprinkle lightly with garlic powder.

Bake for 5 minutes or until light golden brown and crispy.

Use the pita wedges to scoop up the yogurt dip!

RockIt family had a relaxing long weekend, what a nice change!  Everyone back in school and settling into their routines?  And speaking of school, how do you and your teachers explain 9-11 to your children? The History Channel has a great documentary playing lately which helps explain 9-11 to younger children.  There are artifcats and items at the Smithsonian that young children can relate to (cell phones, briefcases, fireman’s ax).
