Summer 2011 is quickly coming to a close, and we are not ready for it to be over. As we are getting ready for back to school, we wanted to know “What are you doing?”  Most moms did their back to school clothes shopping, new lunchboxes, new backpack and shoes, along with massive school supplies in early August.  When did RockIt Mom get those chores done? Still waiting for the time to do it!  We wanted to get the most of our vacation as we could, so that required ignoring the shopping.  Tonight, we were out of milk and lunchbox food, so that required grocery shopping at 9pm, the night before school! Oh well, we had lots of fun at the pool, soccer, minature golf, bike riding and beach.   Always trying to put 10 lbs of fun in a 5 lbs bag. (more…)

Summer Corn and White Bean Soup

What?! Soup in August? Yes, here is a great summer recipe.  It can get cool at night, especially on the West Coast.  Try it out or save it for when your area cools down.

This quick, fiber-packed soup is a terrific way to use fresh corn. Add a slight kick with a sprinkle of Monterey Jack cheese with jalapeno peppers just before serving. (more…)

1. Kashi Chewy Granola Bars

These are the chewiest bars going (don’t confuse them with other types of Kashi bars — look for “chewy” on the label). They have 130 to 140 calories each, 4 grams of fiber, 5 g of protein, and they’re made with real nuts and whole grains. And they actually taste good. (more…)

SNACKING: How to snack sensibly.  Use muffin liners to portion control your snacks.  A muffin liner is about 1/2 cup or 50 calories. So use them for berries, chips, popcorn, pretzels and cherry tomatoes. (more…)
