Chicken Sausage and Roasted Veggie Pasta Recipe from Trader Joe’s

Chicken Sausage and Roasted Veggie Pasta

 FROM:  The Unofficial Guide to Trader Joe’s (click here to preview)

 •  3 chicken sausages (any flavor),   thinly sliced

 •  1 yellow onion, cut into wedges

 •  1 green bell pepper, chopped

 •  20 grape tomatoes

 •  10 button mushrooms,  stems removed

 •  3 tbsp olive oil, divided

 •  1/4 cup whole milk (Suggestion: Skim Milk or Almond Milk)

 •  12 oz pasta (bowtie, elbows etc) (RockItMom Suggestion: whole wheat pasta)

 •  1/2 cup shredded Mozzarella  cheese (RockIt Mom Suggestion: Low Fat Mozzarella Cheese)

 •  salt and pepper to taste & fresh basil for garnish

 1. Preheat the oven to 400°F. Arrange the onions, peppers and mushrooms on a baking sheet lined with parchment paper. Season with salt and pepper, to taste, and toss with 2 tbsp of olive oil. Bake for 15 minutes.

 2. Turn baking sheet around and add tomatoes. Season with more salt and pepper and toss with the remaining olive oil. Bake another 15 minutes, until vegetables are caramelized.

 3. Meanwhile, in a large skillet over medium heat, add the sausage and saute until heated through. Turn up the heat and add the milk. Stir until thickened, about 5 minutes.

 4. Add the vegetables and any pan juices to the skillet. Toss in the cooked pasta and Mozzarella. Top with basil before serving. Serves 4.

If you have a dirtbike or motorcross enthusias in your house, this is THE WEEKEND for the Lucas Oil National Championshipat Pala Casino and Racetrack.  All the bigs will be there (Dungey, Villapoto, Barcia, Wilson, Canard, etc.)  The races start Sat, Sept. 11 at 8am. This is an amazing event, you won’t want to miss it!

Free Movie Night — San Marcos Civic Screen in LA Fitness Center.  On Friday it is an exotic amazingly imaginative “Spirited Away”.  Then Saturday, strap into our beds and soar into a crazy world of singing fish and sports loving safari animals in “Bedknobs & Broomsticks”. Movies @ 8.

Black Bean Soup to Lower Stress

15- Minute Black Bean Soup

Ingredients

1/2 C chopped red onion

• 2 tsp olive oil

• 1 tsp minced garlic

• 3/4 tsp oregano

• 3/4 tsp cumin

• 15 oz black beans, rinsed and drained

• 2 C chicken broth

• 1 tbsp feta cheese

Directions

1. In a large saucepan, combine onion, oil, garlic, oregano, cumin, and salt to taste. Cook, stirring, over medium heat until softened, about 3 minutes. Stir in beans and broth. Reduce heat to medium-low.

2. Cook, stirring occasionally, for 10 minutes. Mash some beans against side of pan. Serve sprinkled with feta and cilantro (optional).
