Exercise of the Week – V Up

This exercise strengthens all of the core muscles, as well as improves back strength and flexibility. This is an intermediate-level exercise and should not be done if one has any back issues or pain. Perform 1-3 sets with as many reps that can be done with proper form. Once you have mastered this exercise, you can move onto the Superman/Banana!  RockIt Mom will post that exercise as soon as she masters it!!  It is not easy but a fabulous challenge!   Happy training!

Tips from RockIt Mom:

1. GREEN – In honor of Earth Day, Earth Week and Earth Fair, there are a number of GREEN tips this week.  

First, what do you do with that old throw rug or carpet pieces?  Here are some ideas: use it to protect your knees when gardening. put in the sink when working on faucet so pieces don’t go down the drain and tools don’t scratch the sink, tape/glue to the wall so when open car door you don’t ding the wall, place between washer/dryer so when items fall down, (more…)

Looking ahead for weekday dinner inspirations? Here are five ideas for five nights.

Monday: Going meatless

Simple Bean and Pasta Parmesan Bake is a good go-to Monday dish. Preheat oven to 350. While a box of penne pasta is cooking, sauté chopped onions and a garlic clove in olive oil. Add 2 cans diced tomatoes with herbs and a can of drained cannellini beans. Mix with drained pasta. Pour into casserole dish and sprinkle with a mixture of bread crumbs and parmesan cheese. Bake until top is bubbly and brown, about 15 minutes. Serve with a green salad. (more…)

Fun Family Events and Freebies for Weekend of April 17, 2010

Earth Day is April 22, 2010.  This weekend there are two major fairs, EarthFair and Walk for Life.

The largest in Southern California, EARTHFAIR 2010.  EarthFair  is on April 18, 2010, 10-5pm in Balboa Park and its FREE.  There are over 400 exhibitors, rides, kids’ activity area, eHome, parade, green shopping, eARTH Gallery, Clean Car concourse and lots of yummy healthy food. 

The second fair is in North County, Walk for Life 5K and Community Health Fair in Oceanside.  This FREE fair is at the Pier from 9 – 5pm. on Sunday, April 18, 2010.  There will be free health screeings, free healthy food, magic, face-painting, kids’ discovery stations and live music. 

Get out and celebrate our planet and learn how to be good to her!

Book Club or Book Review

Do you have any great books you have read lately that you want to give us your opinion on or highly reccomend?  We would love to hear about any and all books that may be a good read, especially with summer on the horizon. 

Here are some of RockIt Mom’s favorites: The Help by Kathyrn Stockett, anything by Tami Hoag, and  Janet Evanovich is always good for a laugh.  One all time favorite that can be reread numerous times, the Big Stone Gap trilogy by Adriana Trigiani and her other novels. The Secret Life of Bee’s by Sue Monk Kidd, give it a try before the seeing the movie.  A friend’s husband wrote Among Pigeons and am in the process of reading it now. It is so enlightening.  Give it a try as well. (more…)

Corn, Mango & Edamame Salad

Super easy summer salad with high protein and fiber, is it too good to be true?

2 cups shelled edamame

1.5 cups corn kernels (preferably fresh)

1.5 cups of mango cubes

1 cup chopped tomato (preferably Roma)

1/2 cup chopped red onion

2 Tbsp. chopped cilantro – without stems

1 Tbsp. extra virgin olive oil

1 Tbsp. freshly squeezed lime juice

3/4 tsp. salt (preferably rock/sea salt)

1/4 tsp. ground black pepper

Prepare edamame, rinse with cool water and set aside. Put all ingredients into large bowl and add edamame. Toss well. Refrigerate about 30 min. and serve. Also, can be served at room temperature it all depends on your preference. Makes 6 servings. Per serving: 160 calories, 9 gr. protein, 6 gr. fiber.

Weekly Tips for Week of April 12, 2010

Tips from RockIt Mom:

1. GREEN – Vacation Energy Saver: Before you leave on vacation – even a weekend getaway – consider turning off your water heater until you return to save energy.  Newer models will heat the water to the set temperature in about an hour upon return.  Or check to see if your heater has a vacation setting. 

2. HEALTH – A “marriage” or pairing of foods and moves are supported by medical testing to help your body reach it’s healing potentials.  Try some of these unions.

Sidestep Skin Cancer: Caffeine + Cardio.  The tests show the caffeine inhibits ATR-1, which prevents the damaged cells from becoming cancer cells. Try a cup of coffee an hour before exercise, as long was you don’t have elevated blood pressure.  The caffeine should increase your endurance and delay fatigue.  Try to get at least 30 min. of some type of cardio per day. FREEBIES for Tomorrow!!

Family Fun and it is FREE on Sunday, April 11, 2010!

First, the Seaport Village Spring Busker Festival.  What is a Busker?  Good question, basically it is a street performer who is able to delight a crowd with funny, exotic and downright amazing tricks.  It is Noon to 5 pm on Sunday.  It is FREE but you have to buy something to validate your parking.

Next is the San Marcos Grand Spring Festival.  There are over 300 vendors, international food, 3 stages, kids’ rides, Taste of San Marcos, Education Avenue. The Festival is located on Via Vera Cruz at San Marcos Blvd. Sunday, April 11, 2010, 9:00 am – 5:00 pm.

Admission & Parking is FREE to public.
